The guest experience begins with gastronomy. Please do not miss out on their welcome drink and home made truffle chips. It is aperitivo perfection and just an introduction to what La Gemma Cafe and Luca’s has to offer. On the evening of our arrival, a three-course dinner was served at La Gemma Café, under the direction of Head Resident Chef Tommaso Querini. His menu highlighted the freshness of Tuscan ingredients while presenting them with modern precision. The atmosphere, suffused with natural light by day and candlelit warmth by night, sets the tone for a dining experience that is both refined and relaxed.
Next day resumed with a Mixology Masterclass at La Gemma, where we learned the art of crafting cocktails under expert guidance, including Florence’s signature Negroni.
Concierge Services
There are so many customizable options hotel can arrange to make your visit adventurous. We opted for an excursion to Profumoir, Florence’s most exclusive private perfumery. They shared the process of making the fragrance, presented a selection of rare essences from their private collection and lead us through making our own scent. The experience concluded with an evocative incense ceremony, a multisensory ritual that underscored the role of fragrance in cultural memory.
The next day we were offered another perspective on Florence’s gastronomic heritage. Curated by Italy Customized and led by expert guide Francesco the tour traced the city’s ancient streets, pausing for tastings of artisanal breads, cured meats, local cheeses, and intimate venues often overlooked by visitors.

Wellness at Allure Spa

A Gastronomic Finale at LUCA’s
The culmination of the stay took place with dinner at LUCA’s by Paulo Airaudo, a fine-dining restaurant renowned for its contemporary interpretation of Tuscan cuisine. A four-course tasting menu with wine pairing showcased Chef Airaudo’s artistry, balancing respect for local tradition with international influence.
Highlights included a parsley risotto with kumquat and Mazara del Vallo red shrimp, matched with FiorFiore 2022 from Cantina Roccafiore; and red snapper with bagna cauda sauce, complemented by Louis Pinot Nero 2023 from Patrick Uccelli which bought the evening to a memorable close.
